THE BEST OF ALBANIAN COOKING

Located at the crossroads of East and West, Albania is a country whose culinary influences include Italy, Greece, and Turkey. The Best of Albanian Cooking includes over 100 recipes for favorite Albanian dishes, covering every aspect of the Albanian meal. There are fourteen chapters which include inviting meze-s (appetizers) as well as Ground Meat, Poultry, Fish, Pastry, Pies, Soups, Desserts, and Refreshing Drinks.

Savor classic Albanian dishes like hearty Tavė kosi (Baked Lamb and Yogurt), delicately seasoned Midhje nė verė tė bardhė (Mussels in White Wine) and Thellezė me ullinj (Grouse and Olives), all adapted for the North American kithen.

"Albanians are rightly proud of their food: delicious and wholesome. All foreign visitors to Albania that we happened to host...have really enjoyed the delicious Albanian dishes my wife served them. They couldn't resist asking her to write down some of the recipes for them or urging her to open a restaurant that couldn't but be a 'smashing success.' It was with this mind that we decided to choose some typical Albanian dishes from her arsenal of recipes and write this Albanian Cookbook in English."

-- from the introduction by R. John Hysa
